Wilted greens & beans side

A super simple side dish or salad of wilted greens and soft gooey beans

  • 1 tbsp olive oil
  • 2 handfuls rainbow chard
  • 4 handfuls Spinach
  • 1 clove garlic
  • 1 can cannellini beans
  • 6 stalks Freshly chopped chives (& their flowers if in season)
  • 1 handful Fresh Mint
  • 1 handful Fresh Parsley
  • 2 tbsp grated Parmesan Can be left out if vegan


  • sweat the chard and spinach with the garlic and half the olive oil over a medium heat then cover. Allow the greens to release their own moisture for steaming and cook until wilted.
  • Add the cannellini beans and herbs and stir through
  • Drizzle over a tbsp of olive oil and toss the greens
  • Place in a serving bowl and grate over the parmesan
  • Scatter the chive flowers through and do one final folding of the dish
