Wilted Greens and bean side dish

This is a super simple, super healthy dish that can be served as a main salad for lunch or as a side accompaniment for supper. I love this kind of simple food – full of iron, zinc and fresh flavours. The cheese sprinkles are optional for non vegans and the chive flowers make it a pretty little dish if they are in season and available to you. You can add all sorts to this dish from feta to buttered asparagus spears to puy lentils and chicken pieces. but the basic foundations are it’s core. Make it your own, tailor it to your taste, but know whatever you do – goodness lies here. Enjoy xx

WILTED GREENS SALAD

Wilted greens & beans side

A super simple side dish or salad of wilted greens and soft gooey beans

Ingredients

  • 1 tbsp olive oil
  • 2 handfuls rainbow chard
  • 4 handfuls Spinach
  • 1 clove garlic
  • 1 can cannellini beans
  • 6 stalks Freshly chopped chives (& their flowers if in season)
  • 1 handful Fresh Mint
  • 1 handful Fresh Parsley
  • 2 tbsp grated Parmesan Can be left out if vegan

Instructions

  • sweat the chard and spinach with the garlic and half the olive oil over a medium heat then cover. Allow the greens to release their own moisture for steaming and cook until wilted.
  • Add the cannellini beans and herbs and stir through
  • Drizzle over a tbsp of olive oil and toss the greens
  • Place in a serving bowl and grate over the parmesan
  • Scatter the chive flowers through and do one final folding of the dish
